The equilibrium which exists between 1,2- and 1,3-diacylglycerols and the lower solubility of the latter has been exploited in synthesis. Crystallization of a mixture of the two diacylglycerols from a suitable solvent such as hexane gives the 1,3- isomer only. Triacylglycerols containing only one type of acyl group are easily made by acylation of glycerol with acid chloride, anhydride, or free acid. For example: glycerol and a small excess of fatty acid with p-toluenesulphonic acid as catalyst, tetrahydrofuran as solvent, and molecular sieve as desiccant give good yields of triacylglycerols after reaction at 1l0-120°C for about 6 hours.
